I'm actually very happy you demo'd this technique as I took a class last week with Will Gilson (chef from Boston) who used some jarred pearl onions and said it was the only jarred vegetable he thought was any good.  It may be true, or may have been an excuse.  At least now I know the proper way to blanch and peel them.

Of course, I wont be able to use the jarred ones from now on.  They were used for a recipe to make Coq au Bier which was extremely tasty.
