Go with non-bleached. That's what I use in the video and what I prefer.

Hi Chef,
I modified your recipe to make a cherry-ginger scone (see pic). I left out the onions and put in the following:
- 1/4 c. crystallized ginger from sliced, chopped
- 3/4 c. dark, sweet cherries from frozen, chopped (I wanted to use tart cherries, but couldn't get them)
- 1 1/2 tbsp. lemon zest
- sprinkled top with some large granulated decorating sugar
These came out great. Flaky, not dense and very flavorful.
