Description
A flavorful brine that was originally developed for a Chinese inspired chicken dish. All ounce measurements are by weight.
Ingredients
6 oz
Salt (Kosher) 3 1⁄2 oz
Sugar 6 oz
Chinese Five Spice 20
Black Pepper Corns 1⁄5 oz
Cinnamon (Ground) 16 c
Water 20
Clove(s)Instructions
- Combine all ingredients in large sauce pot and bring to a boil, whisking to dissolve sugar and salt.
- Cool to room temperature before using.
Notes
This brine works great with poultry and pork. Brine proteins for 36-48 hours. Rinse under cold water and allow to dry overnight in refrigerator before cooking.
